The Basque bakery company Okin joins the effective water management and energy saving thanks to the implementation of the LIFE MCUBO Project.
Okin (meaning «baker» in Basque) is a family bakery founded in 1994 on the Basque Coast (Zumaya). In spite of the traditional character of its product, it is committed to innovation hand in hand with the latest trends in food. Always under the Clean Label philosophy (without additives or preservatives), the basis on which its concept of Health and Innovation grows. Two words that go hand in hand in all their R&D projects because health is not something they treat anecdotally, but is a transversal characteristic that is part of each of their families and breads. Even though water and energy consumption in the bread-making process is high, some of the energy and treatment materials could be saved by installing a real-time monitoring system to avoid the water management unit.
The implementation of LIFE MCUBO would not only reduce water and energy consumption and the environmental impact associated with water management, but also increase the profitability of companies and contribute to the fight against drought.
In the food industry’s case, one of the main water consumers, consumption reduction must be considered not only in production processes, but also in auxiliary processes, such as the cleaning and disinfection of facilities and material used in the production.
